Are you bored of eating the same vegetables like cauliflower, carrots, peas, okra,etc everyday?? Then try this recipe to bring in some freshness and novelty in your life…

INGREDIENTS:
1.1 tbsp of cooking oil (kathal).
2.1 tsp of cumin seeds.
3.2-3 pinches of asafoetida powder.
4.2 tsp of salt.
5.1 tsp of coriander powder and 1 tsp of fennel powder.
6.1 tsp of turmeric powder and 1 tsp of chilli powder.
7.2-3 potatoes (peeled and cut into thin wedges)(optional).
8.1 onion.
9.Frozen jackfruit.
10.1 tomato.
11.2-3 chilies.
12.3-4 tbsp cilantro.

METHOD:
1. Turn on the burner and keep a non-stick wok on it.
2. Heat the wok and add cooking oil to it. Then add cumin seeds and asafoetida powder.

3.When the seeds begin to crackle then add the cut onions and saute them.You may also add dry ginger powder or ginger paste at this step.

4.After 2-3 mins add all the vegetables and mix them well.

5.Now add the remaining spices namely salt,turmeric,coriander,fennel powder and chilli powder. Mix them well with a spatula.

6.Cover the lid and let it cook on simmer for 10-12 mins.

7.Now open the lid and notice the blending of all the spices and change of color of cooked vegetables.

8.If the vegetables are cooked and are soft ,then add diced tomatoes to it and cook it for another 2-3 mins.

9.Add the cilantro leaves and serve hot.

You can have this with chapati, paranthas or naans.
