Sunshine Creamy Pedha

Month of Festivals is here!!! October always mark the beginning of beautiful Fall season with cold winds, rains of festivities. For the starters, I thought of making a simple sweet which needs just two major ingredients and the delicious mouth -melting soft pedhas are ready in a go. I call them sunshine, because I hope to bring sunshine in all of your lives with these beautiful pedhas.
But as we say that kids are a better judge than us. My daughter called them Naan-khatai pedha looking at them.
For creating design, I used the end of a lint roller. 😉 you may use any mold or press for giving cute shapes. Yes, I have used no color. So their yellow color is totally natural. Now lets begin the recipe..

INGREDIENTS:
1. 1 Pack Ricotta Cheese – 454 g
2. Nestle Table cream – 16 oz/ 235 ml
3. Sugar – 1/2 cup
4. Cardamom powder (elaichi) – 1 tsp
5. Saffron strands(kesar) – a pinch (15 -20 strands)
6. A spool top or lint cleaner top
7. Clarified butter(ghee)– 1 tbsp

METHOD:
| Cooking time: 45 mins | Cooling time : 5 mins | Makes 15 pedhas |

1. Add desi ghee in a wok (kadhai) and heat it .

2. When it melts, add the ricotta cheese and start heating it . Let it melt and turn it for 5-10 mins.
You may cover it with a net or plate partially to avoid splattering all around the burner.

3. Now add the table cream. Stir them together on low-medium heat to thicken the mixture.

4. At this time add the soaked saffron in the mixture. I soaked the saffron in 1 tbsp ricotta cheese with 1 tsp milk only.

5. When it thickens and form a thick paste ,add sugar. Sugar will again reduce the density . So continue stirring on high.

6. When the mixture solidifies or forms a mass /dough turn off the heat. Add the cardamom powder and mix well.

7. Spread it in a platter(thali). Let it cool for 5 mins.

8. Now knead it little like a dough to give it some shine and smoothness. This smoothness helps in shaping it to any desired shape. I kneaded it with fingers almost 25 times .

9. Then pinch some portion off the dough, roll it between your palms and then press with a spool of thread ( or lint roller’s top in my case) to create depressions or designs on them.
