Instant Dhokla in microwave
This post is dedicated to my dear friend Anita. It was through this dish that I got a chance to attend my 1st Meet Up which she has organized. She is an energetic,enthusiastic and warm person who inspires many lives like mine.
The recipe I am sharing today is very easy to follow and requires very less time and effort. It is an appetizer for unexpected last minute guests and your family would love this too. My husband has grown so fond of it,that he keeps demanding this dish everyday. More importantly ,it does not compromise your health for taste.
A quick and easy snack which is healthy,tasty and have a good shelf life.So just roll up your sleeves to delve into this yummy recipe.
Ingredients
1. 1 cup of chickpea flour(besan)
2. 1 cup of buttermilk or( mix 1:1 ratio of home-made curd or dahi with water)
3. 2 Tbsps of semolina(suji) -optional
4. 2 tsps of grated ginger – (optional)
5. 1-2 green chillies finely chopped
6. 1/2 tsp of citric acid or lemon juice
7. 2 tsps of sugar
8. 1 tsp of salt
9. 1 sachet of eno fruit salt.(1 tsp approx.)
For seasoning:
10.1 and 1/2 tsp of oil (for greasing and making seasoning)
11. Curry leaves (kadi patta/meetha neem) – 5-6
12. mustard seeds(rai) – 1 tsp
13. Sesame seeds (til)- 1 tsp
14. sugar – 4 tbsp
15. Lemon juice – 2 tbsp
16. water – 1/2 cup
For garnishing :
1. Green chillies slit in the middle – 2-3
2. Cilantro (dhania)- 5-6 stems
3. Dessicated coconut powder – 2 tbsp
You may vary the quantity of spices as per your taste.
METHOD:
1. Mix all the dry ingredients (except fruit salt) like besan,suji,salt,sugar,citric acid together in a bowl.
2. Now slowly add curd or buttermilk and whisk the batter together.You may use a hand held beater or a churner or a spoon to form a lump-free batter. Also add the ginger chilli paste and oil.
3. Keep on adding water to it to form a pouring consistency like this.
4. Grease the tray or m/w safe vessel with oil with 1/2 tsp of oil.Now pour the batter into the microwave special vessel . You may use even a plastic disposable tray or any plastic container or a glass bowl for making this dhokla. I have used my microwave rice cooker without lid.
5. Now add the eno salt and pour 2-3 drops of water on it so that it starts foaming.The batter will rise now and it had to be quickly kept in the microwave after a gentle stirring.
6. Let it cook for 4 mins.After that take out the dhokla and insert a toothpick in the center and check. If it comes out clean then your dhokla is ready.If not again cook for another 30 secs.
7. Let it cool for another 1 min and insert the toothpick and check again. Mine took nearly 4:30 mins. It depends on the vessel type and microwave. If your plastic is light it may take lesser time and if your m/w is big it may take lesser time.

How to prepare Seasoning:
1. Heat oil in a pan. Sprinkle the mustard and sesame seeds and let them sputter. Cover them while they are sputtering.
2. Now add the green curry leaves and chillies and let them sputter too. Again cover the pan. Open the pan and stir this mixture till it gets roasted.
3. Now add the water slowly on medium flame. Also add sugar at this stage.Let it dissolve and then turn off the heat.
4. Pour this seasoning over sliced and cut pieces of dhokla.
5.Now sprinkle the cilantro and coconut on the top as per your taste and preference.
6. This whole recipe took 10 mins and the yummy dhokla is ready to serve. You may serve it with green chutney or tomato ketchup.
